Strawberry Matcha Latte: The Two-Tone Recipe

The strawberry matcha latte is the most photogenic drink on Instagram — bright green matcha floating above a pink strawberry layer, all over ice, in a clear glass. Starbucks charges $6-7. It's yours for about $1.50 at home, with real strawberries instead of strawberry syrup and ceremonial-grade matcha instead of sugary Starbucks blend.

The recipe at a glance

For 1 grande (16 oz iced):

Strawberry base:

  • 5-6 fresh or frozen strawberries
  • 1 tbsp honey or simple syrup

Matcha layer:

  • 1 tsp (2g) ceremonial-grade matcha powder
  • 1 tbsp hot water (175°F)
  • 1 tsp simple syrup

Milk + assembly:

  • 8 oz cold oat milk
  • Ice

Step by step

1. Make the strawberry puree. Hull and quarter 5-6 strawberries. Combine with 1 tbsp honey in a small bowl. Use a fork to muddle, or blend for 10 seconds in a mini blender. You want a slightly chunky puree, not smooth. Set aside.

2. Whisk the matcha. Sift 1 tsp matcha into a mug or small bowl. Add 1 tbsp of hot water at 175°F (not boiling). Whisk vigorously in a fast "W" motion with a bamboo chasen for 15-20 seconds — or use an electric milk frother — until a smooth, frothy, deep-green paste forms. Stir in 1 tsp simple syrup.

3. Assemble in a glass.

  • Fill a grande-sized (16 oz) glass half-full with ice
  • Spoon the strawberry puree into the bottom of the glass (about 3 tbsp worth)
  • Pour 8 oz of cold oat milk over the ice slowly
  • Finally, pour the matcha paste on top in a slow stream so it layers above the milk rather than mixing

4. Photograph it (this is the whole point). Three visible bands: pink strawberry at the bottom, creamy oat milk in the middle, vivid green matcha on top.

5. Stir thoroughly before drinking. The layering is for the photo. The taste is in the integration — stir until the drink turns a pale green-pink.

What matcha to use

This recipe works with any quality matcha, but the flavor improves dramatically with real ceremonial or latte-grade powder. Our picks:

  • Encha Latte Grade Matcha (buy) — slightly more robust flavor, ideal for milk drinks

Cheap Amazon "matcha" will taste grassy and fish-tank-y under the strawberry. Don't cut corners here.

Customization

Make it vegan: Swap honey for maple syrup or agave. Use oat milk (already the default in this recipe) or almond milk.

Make it low-carb: Use monk fruit sweetener or stevia. Skip the fresh strawberries; use a low-sugar strawberry syrup.

Make it hot: Skip the ice. Warm the oat milk to ~150°F. Layer hot strawberry puree, hot oat milk, then pour the matcha over. Beautiful in a clear mug.

Add cold foam: Whip 2 tbsp oat milk + 1 tsp vanilla syrup in a milk frother for 15 seconds. Pour on top of the matcha layer for a fourth band.

Troubleshooting

Strawberries won't puree: Use frozen strawberries (they break down easier) or thaw fresh ones 10 minutes at room temp first.

Matcha is clumpy: You didn't sift. Sift matcha every time.

Layers mixed immediately: Pour slower. Pour over the ice (ice breaks the fall) rather than directly into the milk.

Too bitter: Your matcha is old or too hot water. Use 175°F water, not boiling.

The caffeine picture

A strawberry matcha latte made with 1 tsp matcha has about 60-70mg of caffeine — similar to an espresso shot, roughly half a cup of coffee. The L-theanine in matcha smooths the caffeine curve so you don't get the coffee jitters.

For 4 drinks:

  • Strawberry puree: 20 strawberries + 4 tbsp honey, blend smooth, refrigerate
  • Matcha paste: 4 tsp matcha + 4 tbsp hot water, whisk, refrigerate
  • Pour strawberry puree into 4 glasses over ice, add 1 cup oat milk each, pour 1 tbsp of matcha paste on top

The pitcher method scales well for brunches and baby showers where the Instagram moment matters.
